Victoria sponge


Home made tomato soup yesterday and cake today, anyone would think I enjoyed cooking.

 For this sponge all you need is
- 6oz baking margarine
- 6oz caster sugar 
- 3 medium sized eggs
- 8oz self raising flour
- 50ml cold milk
- 50ml sunflower oil 
- 1 tsp vanilla essence 

Preheat oven to 180 degrees Celsius and grease and line 2 10 inch cake tins.

Mix together the margarine and sugar until light and fluffy.

Beat the eggs and add in the oil and water, then add to the sugar and margarine making sure there are no lumps.

Add in the vanilla and flour and mix till all combined.

Spread evenly between the 2 cake tunes and bake for 20 minutes or until golden and firm to touch

Leave to cool before turning out and filling with the filling of your choice
